As Seen On TV: Pork Chops, Grits and Collard Greens

My sister and I came across this recipe one day while watching one of our favorite Food Network shows, Restaurant Impossible.  On season five episode thirteen, host Chef Robert Irvine visited failing food establishment, Sweet Tea’s Restaurant and Catering.  Of the many recipes created during this episode the one that really captured our curiosity was the pork chop, grits and greens platter.  It was such a really nice and delicious twist on southern favorites all on one plate.

My sister recreated this platter last night from memory.  I think she did a really great job considering we didn’t find which episode included this dish until after she’d served it for dinner last night.  We never really ate grits alongside greens before but we found this dish to be quite appetizing.  Unfortunately this dish is no longer served at Sweet Tea’s Restaurant and Catering but their current menu is still mouthwatering to look at.

As Seen On TV: Henry Public’s Turkey Leg Sandwich

As was mentioned in earlier posts, I love to cook and finding new recipes for my family to try is very enjoyable.  Because of that love of finding new recipes I spend a lot of time watching the Food Network and the Cooking Channel.  One of my most favorite shows to watch is Unique Eats, in which some of The Cooking Channel’s top chefs rave about their favorite places to eat. Episode four of  season three about pub food featured Henry Public in all of it’s awesome glory.  The pub features crowd favorites such as The Hamburger sandwich, a unique desert called the Wilkinson and of course The Turkey Leg sandwich.  I hope to one day have the pleasure of visiting this fine pub.  But until then, this is what I imagined The Turkey Leg sandwich would taste like using what I had on hand in my refrigerator and pantry:

6 Turkey Legs/drumsticks (1 per person)
6 med-large yellow onions (chopped)
10-15 whole garlic cloves
1 tsp. thyme
4 tbsp. parsley
2 cups plain yogurt
3 cups milk
4 tsp. black pepper
4 tsp. salt
2 tsp. paprika
6 oz. bag of French Fried Onions
Bread and Butter pickles
Thick sliced Butter Bread

Start by seasoning the turkey legs with 2 tsp. salt, 2 tsp. black pepper and paprika. Brown the turkey legs on sides and then remove from the pan.  Next, place the chopped onions, whole garlic cloves, thyme and parsley inside of the same pan and cook until onions are ‘sweated’.  Now place the turkey legs back into the pan.  Mix the milk, yogurt, 2 tsp. black pepper and remaining salt.  Pour this mixture over the turkey legs and onions.  Cover and allow to cook at 300 degrees in a roaster oven for five hours.

After the turkey legs have cooked through, remove from the pan and begin to coarsely shred the meat.  Meanwhile reduce the liquid mixture and then add the shredded meat back into the liquid. Allow the meat to thoroughly soak up the liquid.  Toast the slices of butter bread and then top with a generous portion of the shredded turkey. Top the turkey with a handful of French fried onions and remaining slice of toasted bread. Serve with a pickle on the side and fries.
